Description

Bring back childhood memories with these homemade Copycat Nutter Butters!  Crunchy peanut butter cookies sandwiched around a smooth, creamy peanut butter filling. Easy to make, perfectly sweet, and even better than store-bought—these cookies are pure peanut butter heaven.


Ingredients

Cookies:

  • 1 cup creamy peanut butter

  • ½ cup unsalted butter, softened

  • ½ cup granulated sugar

  • ½ cup brown sugar

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1½ cups all-purpose flour

  • 1 teaspoon baking soda

  • ¼ teaspoon salt

Filling:

  • ¾ cup creamy peanut butter

  • ¼ cup unsalted butter, softened

  • 1½ cups powdered sugar

  • 1 teaspoon vanilla extract

  • 2 tablespoons of milk or heavy cream


Instructions

Make the Cookies:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.

  2. In a bowl, beat peanut butter and softened butter until smooth.

  3. Add granulated sugar and brown sugar; beat until fluffy.

  4. Beat in egg and vanilla extract.

  5. In a separate bowl, combine flour, baking soda, and salt. Gradually mix into wet ingredients until dough forms.

  6. Roll dough into small balls and shape each into a peanut shape. Gently press with a fork to create crisscross patterns.

  7. Bake for 8–10 minutes until edges are set but centers remain soft. Cool on a wire rack.

Make the Filling:

  1. Beat peanut butter, softened butter, powdered sugar, vanilla, and milk until creamy and smooth.

  2. Spread filling onto half the cookies; sandwich with remaining cookies.

Notes

  • Store cookies in an airtight container at room temperature for up to 5 days, or freeze up to 3 months.
