Ingredients
Cookies:
1 cup creamy peanut butter
½ cup unsalted butter, softened
½ cup granulated sugar
½ cup brown sugar
1 large egg
1 teaspoon vanilla extract
1½ cups all-purpose flour
1 teaspoon baking soda
¼ teaspoon salt
Filling:
¾ cup creamy peanut butter
¼ cup unsalted butter, softened
1½ cups powdered sugar
1 teaspoon vanilla extract
2 tablespoons of milk or heavy cream
Instructions
Make the Cookies:
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a bowl, beat peanut butter and softened butter until smooth.
Add granulated sugar and brown sugar; beat until fluffy.
Beat in egg and vanilla extract.
In a separate bowl, combine flour, baking soda, and salt. Gradually mix into wet ingredients until dough forms.
Roll dough into small balls and shape each into a peanut shape. Gently press with a fork to create crisscross patterns.
Bake for 8–10 minutes until edges are set but centers remain soft. Cool on a wire rack.
Make the Filling:
Beat peanut butter, softened butter, powdered sugar, vanilla, and milk until creamy and smooth.
Spread filling onto half the cookies; sandwich with remaining cookies.
Notes
Store cookies in an airtight container at room temperature for up to 5 days, or freeze up to 3 months.
Customize sweetness or peanut flavor by adjusting sugar or peanut butter type.
