Description

Creamy lasagna soup with rich tomato flavor, tender noodles, and melted cheeses in one comforting bowl.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound lean ground beef or ground turkey
  • 1 small yellow onion, finely diced
  • 3 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon crushed red pepper flakes
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 (24-ounce) jar marinara sauce
  • 4 cups low-sodium chicken broth
  • 1 (15-ounce) can crushed tomatoes
  • 8 lasagna noodles, broken into pieces
  • ½ cup heavy cream
  • ½ cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • Fresh basil or parsley, chopped
  • Extra Parmesan cheese for topping

Instructions

  1. Heat olive oil and brown the ground meat.
  2. Add onion and garlic and cook until soft.
  3. Stir in seasonings, marinara, broth, and tomatoes.
  4. Simmer the soup to develop flavor.
  5. Add noodles and cook until tender.
  6. Lower heat and stir in cream and cheeses.
  7. Serve hot with fresh herbs and Parmesan.

Notes

  1. Do not overcook the noodles.
  2. Use quality marinara sauce.
  3. Replace heavy cream with half-and-half if desired.
  4. Reheat gently with extra broth.
