2 breakfast sausages (or turkey sausage, or chicken sausage)

2 slices of bread (English muffin, bagel, sourdough, or croissant)

1/2 cup shredded cheddar cheese

1/4 cup shredded mozzarella cheese

1/4 avocado, sliced (optional)

1 slice tomato (optional)

1 tbsp mayonnaise or sriracha mayo (optional)

Fresh spinach or other greens (optional)

Salt and pepper to taste


Instructions

  • Toast the Bread: Toast your chosen bread to a golden brown, ensuring it’s firm enough to hold all the fillings.

  • Cook the Eggs: Scramble or fry the eggs to your preferred texture. Season with salt and pepper.

  • Cook the Sausage: Brown the breakfast sausages in a pan until crispy and cooked through.

  • Layer the Sandwich: Place the cooked eggs on the toasted bread. Add sausage, then layer the melted cheese over the hot eggs and meat. Add your choice of vegetables like avocado and tomato.
