Description

A cozy fall-inspired loaf cake that captures the nostalgic flavor of apple cider doughnuts—without frying. Infused with reduced apple cider, warm spices, and a buttery cinnamon sugar topping, this moist loaf is the ultimate autumn treat perfect for breakfast, dessert, or a midday snack.

Ingredients

Scale

For the Loaf:

  • 240 ml apple cider

  • 120 g sour cream

  • 2 tsp (10 ml) vanilla extract

  • 113 g unsalted butter, melted

  • 2 large eggs, room temperature

  • 165 g brown sugar, lightly packed

  • 160 g all-purpose flour + 2 Tbsp (15 g)

  • 2 Tbsp (16 g) cornstarch

  • 1¼ tsp (5.5 g) baking powder

  • ½ tsp (2.5 g) baking soda

  • ½ tsp (3 g) salt

  • ½ tsp (1.5 g) ground cinnamon

  • ¼ tsp (0.5 g) freshly grated nutmeg

For the Topping:

  • 3 Tbsp (43 g) unsalted butter, melted

  • 50 g granulated sugar

  • ½ tsp (1.5 g) ground cinnamon

Instructions

  • Preheat oven to 325°F (165°C). Grease and line a 9×5-inch loaf pan with parchment.

  • In a small saucepan, reduce the apple cider to 120 ml. Let cool slightly. Whisk in sour cream and vanilla.

  • Melt the butter and let it cool slightly. Beat eggs with brown sugar until frothy, then slowly drizzle in butter while mixing.

  • In a separate bowl, whisk flour, cornstarch, baking powder, baking soda, salt, cinnamon, and nutmeg.

  • Gradually add dry ingredients to wet mixture, alternating with cider mixture. Start and end with dry ingredients.

  • Pour batter into prepared pan. Bake for about 55 minutes or until a toothpick inserted in the center comes out clean.

  • Cool loaf in the pan for 10 minutes, then transfer to a wire rack for another 5 minutes.

  • For the topping, mix granulated sugar and cinnamon. Brush the warm loaf with melted butter and coat generously with the cinnamon sugar.

  • Let it set, then slice and serve at room temperature.

Notes

Reducing the apple cider is essential for a deep, concentrated flavor.

Room temperature eggs help create a fluffier texture.

Coat the loaf while it’s still warm for the best cinnamon sugar adherence.

Add a pinch of ground cloves or allspice for extra autumn spice.
