  • ½ cup butter, softened

  • ½ cup brown sugar

  • 2 tbsp granulated sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • ½ cup mashed very ripe banana

  • 2 tbsp sour cream or Greek yogurt

  • 1½ cups all-purpose flour

  • 1 tbsp cornstarch

  • ½ tsp baking soda

  • 2 tsp cinnamon

  • ¼ tsp salt

For the Cream Cheese Glaze:

  • 3 oz cream cheese, softened

  • 2 tsp butter, softened

  • ¾ cup powdered sugar

  • 1 tsp vanilla extract

  • 23 tbsp half and half or milk

For the Brown Sugar Bits:

  • 1 tbsp brown sugar

  • ¼ tsp cinnamon

  • ⅛ tsp salt

  • 2 tsp melted butter


Instructions

  • Preheat oven to 350°F and line a baking sheet with parchment paper.

  • Cream together butter, brown sugar, and granulated sugar until light and fluffy.

  • Mix in egg and vanilla. Fold in mashed banana and sour cream.

  • In a separate bowl, whisk flour, cornstarch, baking soda, cinnamon, and salt.

  • Gradually combine dry ingredients with wet mixture until just combined.

  • Scoop 7 large dough balls onto the baking sheet.

  • Bake for 11-12 minutes until edges are set and centers are soft.

  • Cool cookies on the baking sheet for 20 minutes.

  • Prepare the glaze by beating cream cheese and butter, then adding powdered sugar and vanilla. Thin with milk as needed.

  • Mix the brown sugar bits ingredients in a small bowl until crumbly.

  • Drizzle glaze over cooled cookies and sprinkle with brown sugar bits.
