For the bread:

  • 1½ cups all-purpose flour

  • 1½ teaspoons baking powder

  • ½ teaspoon salt

  • ½ cup unsalted butter, softened

  • ½ cup granulated sugar

  • 2 teaspoons vanilla extract

  • 2 large eggs

  • ½ cup whole milk

For the apple mixture:

  • ½ cup light brown sugar, packed

  • 1½ teaspoons ground cinnamon

  • 1 large apple, peeled, cored, and chopped (about 1½ cups)

For the topping:

  • 2 tablespoons brown sugar

  • ¼ teaspoon ground cinnamon

For the glaze:

  • ¾ cup confectioners’ sugar

  • ¼ teaspoon ground cinnamon

  • 2 tablespoons water


Instructions

  • Preheat oven to 350°F (175°C). Grease and flour an 8.5 x 4.5 inch loaf pan.

  • In a medium bowl, whisk flour, baking powder, and salt.

  • In a large bowl, beat butter, granulated sugar, and vanilla until creamy.

  • Add eggs one at a time, mixing after each addition.

  • Alternate adding flour mixture and milk, starting and ending with flour. Stir until just combined.

  • In a separate bowl, toss apple chunks with brown sugar and cinnamon.

  • Pour half the batter into the loaf pan. Add half the apple mixture and swirl lightly.

  • Repeat with remaining batter and apples. Swirl again.

  • Mix topping ingredients and sprinkle over the batter.

  • Bake for 45–55 minutes, or until a toothpick inserted comes out mostly clean.

  • Cool in the pan for 15–20 minutes, then transfer to a wire rack.

  • Whisk the glaze ingredients and drizzle over the cooled loaf.

Notes

Use firm apples like Honeycrisp, Fuji, or Granny Smith.

Don’t overmix the batter to maintain a soft crumb.

Tent the loaf with foil if browning too quickly.

For best flavor, glaze after fully cooled.
