Description

Aji Verde is a vibrant and creamy Peruvian green sauce made with fresh cilantro, spicy jalapeños, lime juice, garlic, and mayonnaise. Known for its bold flavor and beautiful green color, this sauce is a staple in Peruvian cuisine. Traditionally served with rotisserie chicken and fried yuca, Aji Verde is also perfect as a dip, spread, or salad dressing. Its smooth texture, zesty tang, and customizable spice level make it a favorite beyond Peru, earning its place on tables around the world.


Ingredients

  • 1 cup packed fresh cilantro leaves (thick stems removed)

  • 12 jalapeños, seeded for less heat

  • 2 garlic cloves

  • 2 tablespoons lime juice (freshly squeezed)

  • ½ cup mayonnaise

  • ¼ cup grated Parmesan cheese

  • Salt, to taste

Optional Add-ins (customizable)

  • 1 tablespoon aji amarillo paste (for added fruitiness and spice)

  • 1 tablespoon huacatay paste (Peruvian black mint)

  • 1 small avocado (for extra creaminess)

  • 1 tablespoon olive oil (to thin the sauce)

  • 2 tablespoons plain Greek yogurt (as a mayo substitute or to lighten)


Instructions

  1. Prep the ingredients: Wash cilantro, slice jalapeños, peel garlic. Remove jalapeño seeds for milder heat.

  2. Add to blender: Place cilantro, jalapeños, garlic, lime juice, mayonnaise, Parmesan cheese, and any optional add-ins into a blender or food processor.

  3. Blend until smooth: Blend for 30–60 seconds, stopping to scrape the sides if needed. Blend until creamy and uniform in texture.

  4. Taste and adjust: Add salt to taste. Adjust lime juice or jalapeños if needed. Add a splash of water or oil if the sauce is too thick.

  5. Chill: Refrigerate for 20–30 minutes before serving for the best flavor.

  6. Serve: Use as a dip, drizzle, or spread. Store in a sealed container in the fridge for up to 1 week.

Notes

If using aji amarillo or huacatay paste, start with a small amount and increase to taste.

For a vegan version, use vegan mayo and skip the cheese or replace it with nutritional yeast.

Aji Verde does not freeze well. Make small batches fresh.
