Description
Bakery style almond croissants filled and topped with rich almond cream and sliced almonds.
Ingredients

- 10–12 day-old croissants
- 8 tablespoons unsalted butter
- 1/2 cup granulated sugar
- 1 cup blanched almond flour
- 1 tablespoon all-purpose flour
- 1/4 teaspoon salt
- 1 large egg
- 1/4 teaspoon almond extract
- Sliced almonds
- Powdered sugar
Instructions
- Preheat oven to 375°F and line baking sheets with parchment.
- Slice croissants in half and arrange on baking sheets.
- Beat butter and sugar until creamy.
- Mix in almond flour, flour, salt, egg, and almond extract.
- Spread almond cream inside croissants and on top.
- Sprinkle with sliced almonds.
- Bake 12 to 15 minutes until golden.
- Cool slightly and dust with powdered sugar.
Notes
- Use day old croissants for best texture.
- Almond flour gives the smoothest filling.
- Store leftovers covered at room temperature for two days.
