Description

Bakery style almond croissants filled and topped with rich almond cream and sliced almonds.


Ingredients

Scale
  • 1012 day-old croissants
  • 8 tablespoons unsalted butter
  • 1/2 cup granulated sugar
  • 1 cup blanched almond flour
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/4 teaspoon almond extract
  • Sliced almonds
  • Powdered sugar

Instructions

  1. Preheat oven to 375°F and line baking sheets with parchment.
  2. Slice croissants in half and arrange on baking sheets.
  3. Beat butter and sugar until creamy.
  4. Mix in almond flour, flour, salt, egg, and almond extract.
  5. Spread almond cream inside croissants and on top.
  6. Sprinkle with sliced almonds.
  7. Bake 12 to 15 minutes until golden.
  8. Cool slightly and dust with powdered sugar.

Notes

  1. Use day old croissants for best texture.
  2. Almond flour gives the smoothest filling.
  3. Store leftovers covered at room temperature for two days.
