Description

Apple Cider Beef Stew Mash with tender sirloin beef simmered in cider gravy and served over creamy cheddar mashed potatoes.


Ingredients

Scale
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 2 lbs top sirloin beef, cubed
  • Salt and black pepper
  • 1 large onion, chopped
  • 3 large carrots, chopped
  • 2 tbsp flour
  • 1½ cups apple cider
  • 1½ cups beef broth
  • 2 lbs potatoes, peeled and chopped
  • ½ cup whole milk
  • ½ cup sour cream
  • 1 cup cheddar cheese
  • 2 tbsp chives

Instructions

  1. Heat oil and butter and sear beef until browned
  2. Add onion and carrots and cook until softened
  3. Sprinkle flour and stir well
  4. Add apple cider and beef broth and bring to a boil
  5. Transfer to covered dish and bake at 375°F until tender
  6. Boil potatoes until soft and mash with milk, sour cream, cheese, and chives
  7. Serve stew over mashed potatoes

Notes

  1. Use chuck roast if needed with longer cooking
  2. Fresh apple cider gives best flavor
  3. Store leftovers separately for up to 3 days
