Description
Apple Cider Beef Stew Mash with tender sirloin beef simmered in cider gravy and served over creamy cheddar mashed potatoes.
Ingredients
Scale
- 1 tbsp olive oil
- 1 tbsp unsalted butter
- 2 lbs top sirloin beef, cubed
- Salt and black pepper
- 1 large onion, chopped
- 3 large carrots, chopped
- 2 tbsp flour
- 1½ cups apple cider
- 1½ cups beef broth
- 2 lbs potatoes, peeled and chopped
- ½ cup whole milk
- ½ cup sour cream
- 1 cup cheddar cheese
- 2 tbsp chives
Instructions
- Heat oil and butter and sear beef until browned
- Add onion and carrots and cook until softened
- Sprinkle flour and stir well
- Add apple cider and beef broth and bring to a boil
- Transfer to covered dish and bake at 375°F until tender
- Boil potatoes until soft and mash with milk, sour cream, cheese, and chives
- Serve stew over mashed potatoes
Notes
- Use chuck roast if needed with longer cooking
- Fresh apple cider gives best flavor
- Store leftovers separately for up to 3 days
