Chewy apple cider cookies stuffed with creamy cheesecake filling, brushed with butter and sprinkled with spiced sugar for the ultimate fall treat.
Ingredients
2 cups apple cider
6 oz cream cheese
3 tbsp granulated sugar
1/2 tsp vanilla
1 3/4 cups flour
2 1/2 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp allspice
1/2 tsp baking soda
1/2 tsp baking powder
3/4 cup butter
3/4 cup brown sugar
1/4 cup granulated sugar
2 egg yolks
2 tsp vanilla
2 tbsp apple cider reduction
Spiced sugar mixture
1–2 tbsp melted butter
Instructions
1. Reduce apple cider until thick.
2. Prepare cheesecake filling and freeze.
3. Cream butter, sugars, and add yolks, vanilla, and cider reduction.
4. Add dry ingredients and chill dough.
5. Wrap cheesecake balls in dough and bake.
6. Brush with melted butter and sprinkle with spiced sugar.
Notes
Best served warm. Freeze up to 2 months. Perfect fall dessert.
