Description

A rich and cozy fall dessert that blends the warmth of apple pie with the creamy decadence of cheesecake, all topped with a buttery cinnamon crumble. Perfect for gatherings, holidays, or simply indulging in seasonal flavors at home.

Apple Filling:

  • 5 apples, peeled and cored

  • 2/3 cup brown sugar

  • 1 tsp cinnamon

  • 1/2 tsp nutmeg

  • 2 tbsp lemon juice

  • 4 tbsp water

  • 1/2 cup unsalted butter

  • 4 tsp cornstarch (mixed with water)

Crust:

  • 3 cups graham cracker crumbs

  • 5.2 oz melted butter

  • 1 tbsp granulated sugar

  • 1/2 tsp cinnamon

Cheesecake Filling:

  • 28 oz cream cheese, room temperature

  • 2 tsp vanilla extract

  • 1 1/4 cups granulated sugar

  • 1 cup sour cream

  • 4 eggs

  • 2 tbsp cornstarch

Crumble Topping:

  • 3/4 cup all-purpose flour

  • 1/2 cup rolled oats

  • 1 tsp cinnamon

  • 1/3 tsp kosher salt

  • 3.1 oz melted butter

  • 1/3 cup brown sugar


Instructions

  • Apple Filling: In a saucepan, melt butter with water, sugar, cinnamon, nutmeg, and lemon juice. Add apples, cover, and simmer for 10 minutes. Stir in cornstarch slurry until thickened. Cool completely.

  • Crust: Preheat oven to 350°F (180°C). Mix graham crumbs, sugar, cinnamon, and butter. Press into a 10-inch springform pan. Bake 7–8 minutes. Let cool.

  • Cheesecake Filling: Lower oven to 280°F (140°C). Beat cream cheese, sugar, and vanilla until smooth. Mix in sour cream, then eggs one at a time. Add cornstarch last.

  • Crumble Topping: Mix flour, oats, sugar, cinnamon, salt, and butter until crumbly.

  • Assemble: Pour half the batter over crust. Add apple filling, then remaining batter. Top with crumble.

  • Bake: Bake 1 hour, until the center slightly jiggles. Cool in oven with door ajar 1–2 hours, then refrigerate at least 5 hours (overnight best).

  • Serve: Drizzle with caramel or dust with powdered sugar if desired.

Notes

Use Granny Smith apples for tartness, or Honeycrisp for a sweeter touch.

Tent with foil if crumble browns too quickly.

A pie dish can substitute for a springform pan.

Patience is key—cooling time ensures the cheesecake sets properly.
