Description

Rich, creamy, and perfectly spiced apple crumble cheesecake layered with tender cinnamon apples, buttery crumble, and a graham cracker crust — a cozy fall dessert that’s both elegant and irresistible.

Ingredients

Scale

Crust:

  • 2 cups (200g) graham cracker crumbs

  • ½ cup (115g) unsalted butter, melted

  • 2 tablespoons granulated sugar

Cheesecake Filling:

  • 24 oz (680g) cream cheese, softened

  • 1 cup (200g) granulated sugar

  • 1 teaspoon vanilla extract

  • 3 large eggs

  • 1 cup (240ml) sour cream

Apple Filling:

  • 3 medium apples, peeled and diced

  • ⅓ cup (70g) brown sugar

  • 1 teaspoon cinnamon

  • 2 tablespoons cornstarch

  • 2 tablespoons water

  • 1 tablespoon lemon juice

Crumble Topping:

  • ¾ cup (95g) all-purpose flour

  • ½ cup (100g) brown sugar

  • ½ teaspoon cinnamon

  • ½ cup (115g) cold unsalted butter, cubed

Instructions

  • Preheat oven to 325°F (160°C). Mix graham cracker crumbs, sugar, and melted butter. Press firmly into a springform pan. Bake for 10 minutes, then cool.

  • In a bowl, beat softened cream cheese until smooth. Add sugar and vanilla; mix well. Add eggs one at a time, scraping sides between additions. Fold in sour cream. Pour over crust.

  • In a saucepan, combine apples, brown sugar, cinnamon, cornstarch, water, and lemon juice. Cook for 5 minutes until thickened slightly. Spread the apple mixture over the cheesecake layer.

  • In another bowl, mix flour, brown sugar, cinnamon, and cubed butter until crumbly. Sprinkle over the apple layer.

  • Bake cheesecake for 65 minutes in a water bath. Turn off the oven, crack the door, and cool inside for 10 minutes. Remove and cool completely.

  • Refrigerate for at least 4 hours or overnight before serving.

Notes

Serve with caramel drizzle or whipped cream for extra indulgence.

Add chopped pecans or oats to the crumble for added crunch.

For best results, chill overnight before slicing.
