Description

Soft buttery Apricot Shortbread Bars layered with sweet apricot jam and baked until golden brown.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large egg yolks
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups apricot jam

Instructions

  1. Preheat oven to 350°F and spray an 8×10-inch baking dish.
  2. Cream butter and sugar until fluffy.
  3. Mix in egg yolks and vanilla extract.
  4. Add flour, baking powder, and salt until combined.
  5. Press half the dough into the baking dish.
  6. Spread apricot jam evenly over the dough.
  7. Sprinkle remaining dough mixture on top.
  8. Bake 35 to 40 minutes until golden brown.
  9. Cool completely before slicing.
