Description

Arabic-Style Braised Beef is a tender slow cooked beef dish with caramelized onions, garlic, and butter simmered to perfection.


Ingredients

Scale
  • 4 1/2 pounds beef chuck roast or stewing beef, cut into large chunks
  • 1 1/2 pounds onions, thinly sliced
  • 3/4 cup water
  • 7 tablespoons unsalted butter
  • 1/2 tablespoon granulated sugar
  • 2 tablespoons red wine vinegar
  • 1 whole head garlic, cloves separated and peeled
  • 23 bay leaves
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Pat beef dry and season with salt and black pepper.
  2. Melt butter in a heavy pot over medium heat.
  3. Add onions and cook 10–15 minutes until softened; stir in sugar and caramelize lightly.
  4. Add beef in a single layer and brown on all sides for 8–10 minutes.
  5. Stir in garlic cloves, bay leaves, red wine vinegar, and water.
  6. Reduce heat to low, cover, and simmer 1 1/2 to 2 hours until tender.
  7. Adjust seasoning with salt and pepper.
  8. Remove bay leaves and serve hot.

Notes

  1. Chuck roast becomes tender and flavorful when slow cooked.
  2. Brown beef in batches to avoid overcrowding.
  3. Store leftovers in refrigerator up to 4 days.
  4. You can cook in the oven at 325°F for about 2 hours.
