Description

A quick and flavorful 25-minute dinner featuring seasoned ground beef, garlic, ginger, and veggies, tossed in a sweet-savory Asian-inspired sauce and served in crisp lettuce cups. Light, customizable, and perfect for weeknights or casual entertaining.

Ingredients

Scale

Lettuce Wrap Sauce

  • 1/4 cup (60 ml) maple syrup, brown sugar, or coconut sugar

  • 1/4 cup (60 ml) coconut aminos, tamari, or soy sauce

  • 2 tsp (10 ml) rice vinegar

  • 1 tbsp (15 ml) toasted sesame oil

  • 1/4–1/2 tsp red pepper flakes (optional)

  • 2 tsp (5 g) arrowroot powder or cornstarch

Ground Beef Filling

  • 1 tbsp (15 ml) olive oil

  • 1 lb (450 g) ground beef

  • 2 cloves garlic, minced

  • 2 tsp (5 g) grated fresh ginger

  • 1 medium red bell pepper, finely diced

  • 1/2 cup (50 g) shredded carrots

  • 4 green onions, sliced into 1” pieces

  • Kosher salt & black pepper, to taste

  • Sesame seeds, for garnish

  • Boston Bibb lettuce leaves

  • Optional: steamed rice or sautéed cauliflower rice for serving

Instructions

  • Make the sauce: In a small bowl, whisk maple syrup, soy sauce, rice vinegar, sesame oil, and red pepper flakes. Stir in arrowroot powder until smooth.

  • Cook the beef: Heat olive oil in a skillet over medium-high heat. Add ground beef and cook until browned, about 5 minutes.

  • Add aromatics: Stir in garlic and ginger; cook 1–2 minutes until fragrant.

  • Add vegetables: Toss in bell pepper and carrots; cook 3–4 minutes until tender.

  • Sauce it up: Pour in prepared sauce and stir to coat. Simmer 2–3 minutes until slightly thickened.

Finish & serve: Stir in green onions, season with salt and pepper. Spoon filling into lettuce leaves, sprinkle with sesame seeds, and serve with rice or cauliflower rice if desired.

Notes

Boston Bibb lettuce works best, but romaine or iceberg can be used.

Don’t overfill wraps—2–3 spoonfuls of filling is perfect.

For spicier wraps, add sriracha or extra red pepper flakes.

Filling can be made ahead and reheated for meal prep.

Leftovers keep well—store beef mixture separately from lettuce.
