Description

Crisp fried egg rolls filled with creamy avocado, sun-dried tomatoes, and fresh herbs, served with a bright tamarind dipping sauce.


Ingredients

Scale
  • 4 large avocados, peeled, pitted, and diced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 red onion, minced
  • 2 tablespoons cilantro, chopped
  • 1/2 teaspoon kosher salt
  • 16 egg roll wrappers
  • 1 large egg, beaten
  • Vegetable oil, for frying

Instructions

  1. Combine avocados, sun-dried tomatoes, red onions, cilantro, and salt in a large bowl.
  2. Lay out egg roll wrappers on a tray and brush edges with beaten egg.
  3. Fill each wrapper with 3 tablespoons of filling, fold in sides, and roll tightly.
  4. Heat oil to 375°F in a dutch oven and fry in batches for 3-4 minutes until golden brown.
  5. Cool on a metal rack and serve with dipping sauce.

Notes

  1. Use firm ripe avocados.
  2. Avoid overfilling wrappers.
  3. Maintain oil temperature for even frying.
  4. Serve immediately for best texture.
