Ingredients
For the Donuts:
-
1/4 cup vegetable oil

3/4 cup sugar
-
3/4 cup pumpkin purée
-
1 tsp pumpkin pie spice
-
1/2 tsp salt
-
1 tsp baking powder
-
1/2 tsp vanilla extract
-
1 cup all-purpose flour
For the Cinnamon Sugar Coating:
-
3 tbsp sugar
-
2 tsp cinnamon
Instructions
-
Preheat oven to 350°F (175°C). Grease a donut pan with nonstick spray.
-
In a large bowl, whisk together oil, eggs, sugar, pumpkin purée, pumpkin pie spice, salt, baking powder, and vanilla until smooth.
-
Stir in flour until the batter is smooth—do not overmix.
-
Spoon batter into donut pan, filling each cavity 3/4 full.
-
Bake for 15-17 minutes, until a toothpick inserted comes out clean.
-
Cool donuts in the pan for 5 minutes, then transfer to a wire rack.
-
In a small bag, mix sugar and cinnamon for coating.
-
Toss warm donuts in the cinnamon sugar until fully coated.
Notes
If donuts don’t release easily, gently loosen edges with a knife.
Lightly brush cooled donuts with melted butter if the cinnamon sugar isn’t sticking.
These can be frozen before coating—coat after reheating for best texture.
Substitute sweet potato purée for a slight flavor variation.
