Description

Crispy baked zucchini tots made with cheddar cheese, zucchini, onion, eggs, and breadcrumbs. A family-friendly healthy side dish.


Ingredients

Scale
  • 2 cups shredded zucchini
  • 1/2 medium onion diced
  • 1/2 cup Italian seasoned breadcrumbs
  • 2 large eggs
  • 4 ounces extra sharp cheddar cheese shredded
  • 3 tablespoons panko breadcrumbs
  • Salt to taste
  • Pepper to taste

Instructions

  1. Shred zucchini and place on a clean kitchen towel.
  2. Sprinkle with salt and let sit for 15 minutes.
  3. Squeeze out as much moisture as possible.
  4. Combine zucchini, onion, breadcrumbs, eggs, and cheddar cheese in a bowl.
  5. Season with salt and pepper and mix well.
  6. Spray a 24-cup mini muffin pan with cooking spray.
  7. Fill cups with mixture and press down gently.
  8. Sprinkle tops with panko breadcrumbs.
  9. Bake at 400°F for 15 to 18 minutes until golden.
  10. Loosen with a knife, cool briefly, and serve.

Notes

  1. Remove as much moisture as possible from zucchini.
  2. Freshly grated cheese provides the best flavor.
  3. Reheat leftovers in the oven or air fryer for added crispness.
