Description
Crispy baked zucchini tots made with cheddar cheese, zucchini, onion, eggs, and breadcrumbs. A family-friendly healthy side dish.
Ingredients

- 2 cups shredded zucchini
- 1/2 medium onion diced
- 1/2 cup Italian seasoned breadcrumbs
- 2 large eggs
- 4 ounces extra sharp cheddar cheese shredded
- 3 tablespoons panko breadcrumbs
- Salt to taste
- Pepper to taste
Instructions
- Shred zucchini and place on a clean kitchen towel.
- Sprinkle with salt and let sit for 15 minutes.
- Squeeze out as much moisture as possible.
- Combine zucchini, onion, breadcrumbs, eggs, and cheddar cheese in a bowl.
- Season with salt and pepper and mix well.
- Spray a 24-cup mini muffin pan with cooking spray.
- Fill cups with mixture and press down gently.
- Sprinkle tops with panko breadcrumbs.
- Bake at 400°F for 15 to 18 minutes until golden.
- Loosen with a knife, cool briefly, and serve.
Notes
- Remove as much moisture as possible from zucchini.
- Freshly grated cheese provides the best flavor.
- Reheat leftovers in the oven or air fryer for added crispness.
