Description
Banana Bread Chocolate Chip Cookies combine the cozy flavor of banana bread with a soft, chewy cookie texture, warm cinnamon, and plenty of chocolate chips.
Ingredients
Scale
- 1 small overripe banana, mashed (about 1/4 cup)
- 1/2 cup vegetable oil or melted butter
- 1 cup light brown sugar, packed
- 1 egg yolk
- 1 teaspoon vanilla extract
- 1 1/3 cups all-purpose flour
- 1/2 teaspoon baking soda
- 2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 2/3 cup chocolate chips
Instructions
- Mash the banana until smooth.
- Mix the banana with the vegetable oil or melted butter and brown sugar until combined.
- Stir in the egg yolk and vanilla extract.
- Add the flour, baking soda, cinnamon, and salt, then mix until no dry streaks remain.
- Fold in the chocolate chips.
- Cover the dough and let it rest for about 15 minutes while the oven preheats.
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Scoop 1 ounce portions of dough onto the baking sheet, spacing them about 2 inches apart.
- Bake for 10 to 11 minutes, until the edges are set and the centers still look slightly underbaked.
- Cool on the baking sheet before serving.
Notes
- Measure the mashed banana and keep it close to 1/4 cup for the best texture.
- Let the dough rest while the oven preheats so the flour can absorb moisture.
- For a vegan version, replace the egg yolk with 1 1/2 teaspoons ground flaxseed mixed with 2 tablespoons cold water.
- Do not overbake; the cookies finish setting as they cool.
