Description

Banana Split Cake is a creamy no-bake dessert with a buttery graham cracker crust, cream cheese filling, bananas, pineapple, whipped topping, peanuts, cherries, and optional hot fudge.


Ingredients

  • 1/2 cup butter, for crust
  • 2 cups graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 8 ounces cream cheese, softened
  • 1/2 cup butter, softened, for filling
  • 2 cups confectioners’ sugar
  • 1/8 teaspoon sea salt
  • 20 ounces crushed pineapple, drained with juice reserved
  • 4 bananas, sliced
  • 8 ounces Cool Whip, thawed
  • 1 1/2 cups finely chopped peanuts
  • 12 maraschino cherries, rinsed and dried
  • Hot fudge sauce, optional

Instructions

  1. Melt 1/2 cup butter with granulated sugar in a small saucepan over medium heat, stirring until the sugar dissolves.
  2. Remove from heat, stir in graham cracker crumbs, and press firmly into the bottom of a 9×13-inch baking dish.
  3. Beat softened cream cheese, 1/2 cup softened butter, confectioners’ sugar, and sea salt for about 2 minutes until fluffy.
  4. Spread the cream cheese mixture evenly over the graham cracker crust.
  5. Drain crushed pineapple well, reserving the juice in a small bowl.
  6. Slice bananas and place the slices in the reserved pineapple juice to help prevent browning.
  7. Remove bananas from the juice, discard the liquid, and arrange banana slices over the cream cheese layer.
  8. Spread drained crushed pineapple evenly over the bananas.
  9. Spread Cool Whip evenly over the pineapple.
  10. Sprinkle chopped peanuts over the whipped topping.
  11. Place one cherry where each slice will be cut.
  12. Drizzle with hot fudge sauce, if using.
  13. Cover and refrigerate for at least 2 hours before slicing into 12 squares and serving cold.

Notes

  1. Use about 14 full-size graham crackers to make 2 cups of crumbs.
  2. Coating the bananas in pineapple juice helps slow browning.
  3. Keep the cake refrigerated between servings.
  4. For clean slices, wipe the knife between cuts.
  5. Do not freeze this dessert because the fruit and whipped topping can turn watery.
