For the Topping:

1/4 cup (60g) unsalted butter

1/2 cup (100g) brown sugar

2–3 ripe but firm bananas, sliced
For the Cake:

1 1/2 cups (190g) all-purpose flour

1 1/2 tsp baking powder

1/4 tsp salt

1/2 cup (115g) unsalted butter, softened

1/2 cup (100g) granulated sugar

1/4 cup (50g) brown sugar

2 large eggs

1 tsp vanilla extract

1/2 cup (120ml) milk
Instructions

Preheat oven to 350°F (175°C). Grease a 9-inch round baking pan.

In the pan, melt 1/4 cup butter over low heat. Sprinkle 1/2 cup brown sugar evenly over the melted butter.

Arrange banana slices over the sugar mixture in a single layer. Set aside.

In a bowl, whisk together flour, baking powder, and salt.

In another bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy.

Add eggs one at a time, beating well after each. Stir in vanilla.

Add flour mixture in two parts, alternating with milk. Mix until just combined.

Pour batter over bananas in the pan, smoothing the top.

Bake 35–40 minutes or until a toothpick inserted in the center comes out clean.

Cool for 10 minutes in the pan. Then, carefully invert onto a serving plate.

Serve warm or at room temperature.
