Description

Fresh corn, cucumber, basil, and chives combine in a quick and refreshing summer salad perfect for potlucks and weeknight meals.


Ingredients

Scale
  • 3 cups cooked corn kernels
  • 1½ cups cucumber, peeled and seeded
  • ½ cup fresh basil, chopped
  • ¼ cup fresh chives, chopped
  • 2 tablespoons mayonnaise
  • Kosher salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Cook and cool the corn.
  2. Peel, seed, and finely chop the cucumber.
  3. Chop the basil and chives.
  4. Place corn in a mixing bowl.
  5. Add cucumber, basil, and chives.
  6. Add mayonnaise and toss gently.
  7. Season with salt and pepper.
  8. Serve immediately or chill before serving.

Notes

  1. Use fresh corn when possible.
  2. Add grape tomatoes or avocado for variation.
  3. Use vegan mayonnaise for a vegan version.
  4. Store refrigerated for up to 2 days.
