- 3/4 pound beef (sirloin or flank steak), thinly sliced
- 1/2 teaspoon salt
- 1/3 teaspoon baking soda
- 3 tablespoons water
- 1 tablespoon rice vinegar
- 1 tablespoon vegetable oil
- 1 tablespoon cornstarch
- 7 tablespoons water
- 2 tablespoons soy sauce
- 2 teaspoons sugar
- 1 tablespoon sesame oil
- 1/2 teaspoon white pepper
- 1 tablespoon cornstarch
- 1 tablespoon oyster sauce
- 3 garlic cloves, minced
- 1 tablespoon fresh ginger, minced
- 2 cups broccoli florets
- 2 tablespoons vegetable oil
Instructions
- Combine beef with salt, baking soda, water, rice vinegar, oil, and cornstarch.
- Marinate beef for 15 minutes.
- Whisk all sauce ingredients until smooth.
- Blanch broccoli for 1 to 2 minutes and drain.
- Stir-fry beef in hot oil for 2 to 3 minutes and remove.
- Cook garlic and ginger until fragrant.
- Return beef and broccoli to pan and add sauce.
- Stir-fry until sauce thickens and coats evenly.
Notes
- Slice beef against the grain for tenderness.
- Do not marinate longer than recommended.
- You may substitute snap peas or bell peppers for broccoli.
