- 3/4 pound very thinly sliced deli roast beef
- 1/2 cup barbecue sauce
- 8 slices cheddar cheese, or 2 cups shredded cheddar

- 2 tablespoons packed brown sugar
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1 1/2 teaspoons poppy seeds
- Nonstick cooking spray or extra butter for the baking dish
Instructions
- Preheat the oven to 350°F and grease a 9-by-13-inch baking dish.
- Place the connected Hawaiian rolls on a cutting board and slice them horizontally through the center with a serrated knife.
- Set the top half aside and place the bottom half in the prepared baking dish.
- Add the thinly sliced roast beef to a bowl, pour in the barbecue sauce, and toss gently until evenly coated.
- Spread the barbecue-coated roast beef evenly across the roll bottoms.
- Arrange the cheddar cheese over the roast beef, covering the filling from edge to edge.
- Place the top half of the rolls over the cheese and press lightly.
- Combine the butter, brown sugar, Dijon mustard, Worcestershire sauce, and poppy seeds in a small saucepan.
- Warm the mixture over medium heat, stirring often, until the butter melts and the sauce reaches a gentle boil.
- Remove the saucepan from the heat and pour the butter mixture evenly over the rolls.
- Use a spoon or pastry brush to coat the tops and guide some of the mixture between the seams.
- Bake for 20 to 25 minutes, until the cheese melts and the roll tops turn golden and lightly crisp.
- Cover the dish loosely with foil if the tops brown too quickly.
- Remove the sliders from the oven and let them rest for 5 minutes.
- Cut along the roll lines and serve warm.
Notes
- Use very thin deli roast beef so the sliders stay tender and easy to bite.
- Choose a sweet, smoky, spicy, or tangy barbecue sauce according to your preference.
- Sharp cheddar gives the sliders a stronger flavor, while mild cheddar creates a softer taste.
