- 1 pound beef short ribs
- 4 large onions, thinly sliced
- 4 cloves garlic, minced
- 6 cups beef broth
- 1 tablespoon balsamic vinegar
- 1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 4 slices French bread
- 1 cup shredded Swiss or Gruyère cheese
Instructions
- Heat olive oil in a large pot over medium heat.
- Season beef short ribs with salt and pepper and sear until browned on all sides.
- Remove ribs and set aside.
- Add onions to the pot and cook until caramelized.
- Stir in garlic and cook briefly.
- Return ribs to the pot and add broth, balsamic vinegar, thyme, and bay leaf.
- Simmer covered until beef is tender.
- Remove ribs, shred meat, and discard bones.
- Return meat to the soup.
- Toast French bread slices lightly.
- Ladle soup into oven-safe bowls, top with bread and cheese.
- Broil until cheese is melted and golden.
