Description
A homemade Taco Bell copycat burrito filled with seasoned ground beef, creamy refried beans, Mexican rice, crunchy corn chips, warm cheese dip, shredded cheese, and sour cream.
Ingredients
Scale
- 1 pound lean ground beef
- 1 (1-ounce) packet taco seasoning
- 1/4 cup water or beef broth, plus more as needed
- 1 cup refried beans, optional
- 2 cups cooked Mexican rice
- 4 burrito-size flour tortillas
- 2 cups Fritos or crushed Doritos
- 1 cup cheese dip, warmed
- 1 cup shredded Mexican cheese blend
- 1/2 cup sour cream
- Salsa, for serving if desired
Instructions
- Heat a large skillet over medium-high heat. Add the ground beef and cook for 6 to 8 minutes, breaking it into small crumbles, until no pink remains.
- Drain excess grease if needed. Add the taco seasoning and water or beef broth, then stir until the beef is evenly coated.
- Cook the seasoned beef for 1 minute, then stir in the refried beans. Add a small splash of water if the mixture feels too thick.
- Cook or reheat the Mexican rice until hot. Warm the cheese dip separately.
- Place the tortillas under a damp paper towel and microwave for about 30 seconds, or until soft and flexible.
- Lay one tortilla flat. Spoon one-fourth of the beef and bean mixture slightly below the center.
- Top the beef with one-fourth of the Mexican rice, chips, cheese dip, shredded cheese, and sour cream.
- Fold the left and right sides of the tortilla toward the center. Roll tightly from the bottom to form a burrito.
- Repeat with the remaining tortillas and filling.
- Serve immediately with salsa, or toast each burrito seam-side down in a dry skillet over medium heat for 1 to 2 minutes per side.
Notes
- Do not overfill the tortillas, or they may tear while rolling.
- Assemble the burritos shortly before serving so the chips remain crisp.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- For freezing, omit the chips, sour cream, and cheese dip. Wrap each burrito tightly and freeze for up to 3 months.
- Thaw frozen burritos overnight in the refrigerator before reheating.
- Reheat burritos in a skillet, a 350°F oven, an air fryer, or the microwave until hot in the center.
- Add fresh chips after reheating for the best crunch.
