Description
Belarusian Potato Sausage made with grated potatoes, ground beef, fresh dill, and garlic, baked until golden brown and traditionally served with sour cream or pickles.

- 14 oz ground beef
- 1 lb 5 oz potatoes, peeled and coarsely grated
- 1 medium onion, finely chopped
- 1/2 medium carrot, grated
- 1 large egg
- 2 garlic cloves, minced
- 1 cup fresh dill, finely chopped
- 1/2 teaspoon ground black pepper
- 1 teaspoon meat seasoning
- 1/2 teaspoon potato seasoning
- Salt, to taste
- Natural pork casings, soaked and rinsed
- Vegetable oil, for greasing
Instructions
- Grate the potatoes on a coarse grater and lightly squeeze out excess liquid.
- Add chopped onion and grated carrot to the potatoes.
- Mix in ground beef, egg, garlic, dill, black pepper, meat seasoning, potato seasoning, and salt until fully combined.
- Rinse and soak the pork casings, then slide onto a sausage stuffer or funnel.
- Stuff the casings with the potato-meat mixture without overfilling and tie off the ends.
- Prick sausages in several places to release steam.
- Place sausages in a greased baking dish and bake at 375°F for 45 to 55 minutes, turning once, until golden brown and cooked through.
- Let rest for 5 minutes before serving.
Notes
- For a crispier crust, pan-fry after baking.
- Serve with sour cream, mustard, or pickled vegetables.
- Store leftovers in the refrigerator up to 3 days.
- Ground pork may be substituted for beef.
