Description

Berry Croissant Bake is a warm, sweet breakfast casserole made with buttery croissants, mixed berries, and a creamy vanilla cream cheese custard. It tastes like a berry Danish and can be prepared ahead for brunch or overnight breakfast.


Ingredients

  • 4 large baked croissants, torn into small pieces
  • 1 cup sliced strawberries
  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • 1 block (8 ounces) cream cheese, softened
  • 2/3 cup granulated sugar
  • 3/4 cup milk
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • Cooking spray, for the baking dish
  • Optional powdered sugar or maple syrup, for serving

Instructions

  1. Preheat the oven to 350 degrees F. Spray a 9 x 9-inch baking dish with cooking spray.
  2. Spread the torn croissant pieces evenly in the prepared baking dish.
  3. Scatter the sliced strawberries, blueberries, and raspberries evenly over the croissants.
  4. Beat the softened cream cheese with an electric mixer until fluffy.
  5. Gradually add the granulated sugar, milk, eggs, and vanilla extract. Mix until well combined and mostly smooth.
  6. Pour the cream cheese mixture evenly over the croissants and berries.
  7. Cover the dish and refrigerate for 15 minutes or up to 14 hours.
  8. Remove the cover and bake for 35 to 40 minutes, or until the top turns golden brown and the center sets.
  9. Let the bake rest for 5 to 10 minutes before serving.
  10. Serve warm with powdered sugar, maple syrup, or extra berries, if desired.

Notes

  1. Use already baked croissants, not raw croissant dough.
  2. Day-old croissants work well because they absorb the custard without becoming too soft.
  3. Soften the cream cheese before mixing for a smoother custard.
  4. If using frozen berries, add them straight from the freezer and allow a few extra minutes of baking time if needed.
  5. Store leftovers in an airtight container in the refrigerator for up to 3 days.
