Description

A colorful frozen yogurt bark made with blended mixed berries, creamy yogurt, honey, and crunchy granola. It makes an easy breakfast, snack, or light dessert for the whole family.


Ingredients

  • 3 cups mixed berries, fresh or frozen, divided
  • 2 cups plain regular or Greek yogurt
  • 2 to 3 tablespoons honey
  • 1/2 cup granola

Instructions

  1. Line a 9-by-13-inch baking dish or rimmed baking sheet with parchment paper.
  2. Add 2 cups of the mixed berries, the yogurt, and 2 tablespoons of honey to a blender.
  3. Blend until smooth, then taste and add the remaining tablespoon of honey when needed.
  4. Pour the berry yogurt mixture onto the prepared pan.
  5. Spread the mixture into an even layer about 1/4 to 1/2 inch thick.
  6. Chop the remaining berries into small pieces when necessary.
  7. Sprinkle the remaining berries and granola evenly over the yogurt.
  8. Press the toppings gently into the yogurt so they stay attached.
  9. Freeze for at least 4 hours or until completely solid.
  10. Lift the frozen slab from the pan and peel away the parchment paper.
  11. Break the bark into approximately 16 pieces.
  12. Serve immediately or transfer the pieces to an airtight freezer container.

Notes

  1. Use Greek or regular plain yogurt. Greek yogurt tastes tangier, so it may need the full 3 tablespoons of honey.
  2. If using vanilla or honey-flavored yogurt, omit or reduce the honey.
  3. Fresh or frozen mixed berries both work. Pat thawed topping berries dry before using.
  4. Chop large berries into small pieces, especially when serving young children.
  5. This recipe is suitable for children ages 1 year and older with age-appropriate serving and adult supervision.
  6. Store the pieces in an airtight container in the freezer for up to 1 month.
  7. Place parchment paper between layers to prevent sticking.
  8. Serve directly from the freezer because the bark softens quickly at room temperature.
