Description

A moist and flavorful zucchini bread made with warm spices, fresh zucchini, brown sugar, vanilla, and crunchy walnuts. Perfect for breakfast, snacks, or dessert.


Ingredients

Scale
  • 1 cup white sugar
  • 1 cup brown sugar
  • 3 eggs
  • 1 cup light olive oil
  • 3 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon ground nutmeg
  • 3 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 cups grated zucchini
  • 1 cup chopped walnuts

Instructions

  1. Preheat oven to 325°F and grease two 8 x 4-inch loaf pans.
  2. Mix flour, salt, baking powder, baking soda, nutmeg, and cinnamon in a large bowl.
  3. Whisk eggs, oil, vanilla, white sugar, and brown sugar in another bowl.
  4. Combine wet ingredients with dry ingredients.
  5. Fold in grated zucchini and walnuts.
  6. Let batter rest for 5 to 10 minutes.
  7. Divide batter between prepared pans.
  8. Bake 50 to 60 minutes until a toothpick comes out clean.
  9. Cool in pans for 20 minutes.
  10. Remove from pans, cool completely, slice, and serve.

Notes

  1. Recipe yields 2 loaves.
  2. Store in an airtight container up to 5 days.
  3. Freeze up to 2 months for longer storage.
  4. You may replace half the oil with applesauce.
