Ingredients
Scale
- 2 flour tortillas (8-inch)
- 4 oz cream cheese, softened
- 1 tablespoon honey or maple syrup
- ½ teaspoon vanilla extract
- ½ cup fresh blueberries
- ½ teaspoon cinnamon (optional)
- 1 teaspoon butter or coconut oil (for cooking)
- Powdered sugar or extra honey for topping (optional)
Instructions
- Prepare the Filling: In a small bowl, mix the softened cream cheese, honey, and vanilla extract until smooth.
- Assemble the Quesadilla: Spread the cream cheese mixture evenly over one tortilla. Sprinkle fresh blueberries over the top. If desired, sprinkle a little cinnamon for extra flavor. Place the second tortilla on top to make a sandwich.
- Cook the Quesadilla: Heat a nonstick skillet over medium heat and melt the butter or coconut oil.
- Place the quesadilla in the skillet and cook for 2–3 minutes on one side, pressing gently with a spatula. Flip and cook for another 2–3 minutes until golden brown and slightly crispy.
- Serve: Remove from the pan, let cool slightly, then cut into triangles. Dust with powdered sugar or drizzle with extra honey if desired.
Notes
- Swap cream cheese for Greek yogurt or peanut butter for a different twist.
- Frozen blueberries can be used, but thaw and pat them dry first.
- Add granola for a crunchy texture.
- Serve with a side of yogurt or a fruit salad for a balanced meal.
