Description

Soft cake-like cookies filled with blueberry swirl and topped with buttery crumble.


Ingredients

  • 2 teaspoons granulated sugar
  • 2 teaspoons lemon juice
  • 2 teaspoons cornstarch
  • 2 teaspoons water
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • ¼ teaspoon baking soda
  • ½ cup unsalted butter
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • ¼ cup all-purpose flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon brown sugar
  • ¼ teaspoon salt
  • 2 tablespoons butter

Instructions

  1. Make blueberry filling by cooking blueberries, sugar, and lemon juice.
  2. Add cornstarch mixture and cook until thick.
  3. Prepare cookie dough by mixing dry and wet ingredients.
  4. Fold in blueberries.
  5. Make crumble topping by mixing ingredients until crumbly.
  6. Layer blueberry filling into dough.
  7. Scoop dough onto baking sheet.
  8. Top with crumble.
  9. Bake at 350°F for 14-16 minutes.
  10. Cool and serve.

  1. Do not overmix dough.
  2. Use fresh blueberries for best texture.
