Description

This blueberry goat cheese flatbread combines sweet berries, creamy cheese, and honey for a quick summer appetizer.


Ingredients

  • 2 flatbread crusts
  • 2 tablespoons olive oil
  • 46 tablespoons apricot jam
  • Zest of 1 lemon
  • 8 oz goat cheese
  • 1 cup fresh blueberries
  • 46 tablespoons honey
  • Fresh mint leaves
  • Kosher salt

Instructions

  1. Preheat oven to 500°F
  2. Brush flatbread with olive oil
  3. Spread apricot jam and lemon zest
  4. Add goat cheese evenly
  5. Top with blueberries
  6. Bake for 8-10 minutes
  7. Broil for 1-2 minutes
  8. Drizzle honey and add mint
  9. Sprinkle salt and slice
