Description

A refreshing and vibrant salad perfect for summer, combining sweet peaches, juicy blueberries, and creamy feta cheese.


Ingredients

Scale
  • 4 cups mixed salad greens
  • 1 cup fresh blueberries
  • 2 ripe peaches, sliced into thin wedges
  • 1/2 cup crumbled feta cheese
  • 1/4 cup walnuts, toasted and chopped (optional)
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Wash and dry the blueberries and salad greens
  2. Slice peaches into thin wedges
  3. Toast and chop walnuts if using
  4. Combine greens, blueberries, and peaches
  5. Add feta and walnuts
  6. Whisk dressing ingredients
  7. Drizzle dressing over salad
  8. Toss gently and serve
