Description

Blueberry Peach Sour Cream Cake is a moist summer skillet dessert made with fresh yellow peaches, blueberries, and a tender sour cream crumb.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 ounces butter, softened, about 4 tablespoons
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 4 medium fresh yellow peaches, sliced into wedges
  • 6 ounces fresh blueberries
  • Butter, for greasing the skillet

Instructions

  1. Preheat the oven to 350°F with the oven rack in the middle position.
  2. Grease the bottom and sides of a 10-inch high-sided cast iron skillet with butter.
  3. Sift the flour, baking powder, and baking soda into a medium bowl.
  4. In a separate bowl, beat the softened butter, sugar, and eggs on high speed for 2 to 3 minutes, until pale and fluffy.
  5. Add the vanilla extract and sour cream, then beat for about 1 more minute until creamy.
  6. Reduce the mixer speed to low and mix in the flour mixture just until combined.
  7. Spread the batter evenly into the prepared cast iron skillet.
  8. Arrange the peach wedges over the batter and scatter the blueberries evenly between the peach slices.
  9. Bake uncovered for 45 minutes to 1 hour, until the cake turns golden and a tester inserted in the center comes out clean.
  10. Halfway through baking, add extra peach slices and blueberries on top for presentation, then continue baking.
  11. Remove the cake from the oven and let it cool in the skillet before slicing and serving.

Notes

  1. Use a 10-inch high-sided cast iron skillet, a 9×3-inch springform pan, or a high-sided 9-inch round cake pan.
  2. Measure flour carefully by spooning it into the measuring cup and leveling it off.
  3. Do not overmix the batter after adding the dry ingredients.
  4. Fresh yellow peaches give the best flavor, but drained canned peaches or thawed frozen peaches also work.
  5. Sour cream and Greek yogurt can both work in this recipe.
  6. For a gluten-free version, use a 1:1 measure-for-measure gluten-free flour blend.
