Description

Perfectly moist blueberry zucchini bread packed with fresh blueberries, shredded zucchini, and topped with a simple lemon glaze.


Ingredients

  • 3 large eggs
  • 1 cup vegetable oil
  • 1 tablespoon vanilla extract
  • 2 1/4 cups granulated sugar
  • 2 cups shredded zucchini
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 pint fresh blueberries
  • 1 cup powdered sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon heavy whipping cream

Instructions

  1. Preheat oven to 350°F and grease loaf pans.
  2. Beat eggs, oil, vanilla, and sugar until smooth.
  3. Fold in shredded zucchini.
  4. Mix flour, salt, baking powder, and baking soda into the batter.
  5. Fold in blueberries gently.
  6. Pour batter into prepared pans.
  7. Bake for 50 minutes or until a toothpick comes out clean.
  8. Cool for 20 minutes and transfer to wire racks.
  9. Whisk powdered sugar, lemon juice, and cream together.
  10. Drizzle glaze over cooled bread and serve.
