Description

Colorful Breakfast Fruit Kabobs made with strawberries, orange, pineapple, banana, and kiwi, then finished with a simple dark chocolate drizzle. These easy rainbow fruit skewers make a fresh breakfast, brunch dish, snack, or game-day party treat.


Ingredients

  • 6 large strawberries, hulled
  • 1 medium orange, peeled and separated into segments
  • 1/2 ripe pineapple, peeled, cored, and cut into 1-inch chunks, about 1 1/2 cups
  • 1 medium banana, cut into 1-inch slices
  • 2 kiwi fruits, peeled and cut into 1-inch chunks
  • 4 ounces semisweet or dark chocolate, chopped
  • Flaky sea salt, optional
  • 6 wooden or reusable skewers

Instructions

  1. Wash and dry the strawberries thoroughly, then remove the green tops.
  2. Peel the orange and separate it into segments. Cut large segments in half.
  3. Peel and core the pineapple, then cut it into 1-inch chunks.
  4. Peel the kiwi and cut it into 1-inch chunks.
  5. Slice the banana into 1-inch pieces.
  6. Line a large baking sheet or platter with parchment paper.
  7. Thread strawberry, orange, pineapple, banana, and kiwi onto each skewer in rainbow order.
  8. Place the completed fruit kabobs on the prepared pan.
  9. Place the chopped chocolate in a microwave-safe bowl.
  10. Microwave for 30 seconds, stir, and continue heating in 15- to 30-second intervals until smooth.
  11. Drizzle the melted chocolate over the fruit kabobs.
  12. Sprinkle with flaky sea salt, if desired.
  13. Freeze for 5 minutes or refrigerate for 10 to 15 minutes, until the chocolate firms.
  14. Serve cold or slightly chilled.

Notes

  1. Dry the fruit thoroughly so the chocolate sticks properly.
  2. Use firm, ripe fruit that will hold securely on the skewers.
  3. Slice the banana shortly before assembly to limit browning.
  4. Serve with vanilla yogurt if you prefer to leave off the chocolate.
  5. Store leftovers in an airtight container in the refrigerator for up to 1 day.
  6. Remove the fruit from pointed skewers before serving it to young children.
