Description
A fun no-cook Breakfast Sushi recipe made with banana, Greek yogurt, colorful cereal, and fresh blackberries. This kid-friendly breakfast is quick, playful, creamy, crunchy, and ready in 5 minutes.
Ingredients
Scale
- 1 large ripe banana, peeled
- 2 tablespoons Greek yogurt, plain or vanilla
- 1/3 cup Fruity Pebbles cereal, or another colorful crispy cereal
- 4 fresh blackberries, halved if large
Instructions
- Peel the banana and place it on a clean plate or cutting board.
- Spoon the Greek yogurt into a small bowl so it spreads easily.
- Pour the cereal into a shallow dish.
- Rinse the blackberries and pat them dry.
- Spread Greek yogurt over the outside of the banana with a butter knife, covering the surface in a thin, even layer.
- Place the yogurt-coated banana in the cereal and gently roll it until all sides are coated.
- Move the coated banana back to the plate.
- Slice the banana into bite-sized sushi pieces.
- Arrange the pieces cut-side down and top each piece with a blackberry.
- Serve immediately for the best crunchy texture.
Notes
- Use a firm ripe banana instead of an overripe banana for cleaner slices.
- Spread the yogurt lightly so the cereal sticks without sliding off.
- Serve right after slicing to keep the cereal crisp.
- Swap blackberries with blueberries, raspberries, or sliced strawberries if preferred.
- For a less sweet version, use plain Greek yogurt and whole-grain crispy cereal.
