Description

Fresh peach strawberry pie with juicy fruit filling and a flaky brown butter crust perfect for summer desserts and family gatherings.

Ingredients

Scale
  • 1 cup cold unsalted butter
  • 2⅔ cups plus 1 tablespoon all-purpose flour
  • ¾ teaspoon fine sea salt
  • ½ cup cold water
  • 1 tablespoon apple cider vinegar
  • 1 whole egg, whisked
  • 3 cups fresh sliced peaches
  • 3 cups fresh strawberries, hulled and quartered
  • ¼ cup granulated sugar
  • ¼ cup plus 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • ¼ teaspoon fine sea salt
  • 2 to 3 tablespoons turbinado sugar

Instructions

  1. Brown the butter over medium heat until golden and nutty, then chill until firm.
  2. Mix flour and salt together, then cut in the browned butter until crumbly.
  3. Add ice water and vinegar gradually until the dough comes together softly.
  4. Divide the dough into two discs and chill for one hour.
  5. Preheat the oven to 425 degrees Fahrenheit.
  6. Roll out the first crust and place it into a 9-inch pie pan.
  7. Roll out the second crust and cut strips for the lattice top.
  8. Mix peaches, strawberries, sugar, cornstarch, lemon juice, lemon zest, and salt together.
  9. Transfer the fruit filling into the crust while leaving excess liquid behind.
  10. Arrange the lattice strips over the pie and crimp the edges.
  11. Brush with egg wash and sprinkle turbinado sugar over the top.
  12. Bake for 25 minutes, reduce heat to 350 degrees Fahrenheit, and bake 40 to 50 minutes more.
  13. Cool the pie completely before slicing and serving.

Notes

  1. Use ripe peaches for the sweetest flavor.
  2. Leave excess fruit liquid behind to avoid a soggy crust.
  3. Cool the pie fully before slicing for the cleanest cuts.
  4. Serve with vanilla ice cream for the best summer dessert experience.
