Description

A creamy, no-bake brownie batter dip made with cream cheese, cocoa powder, brown sugar, and vanilla. Serve this quick chocolate dessert with fruit, pretzels, graham crackers, or cookies.


Ingredients

  • 4 ounces cream cheese, softened
  • 2 tablespoons unsalted butter, softened
  • 1 cup powdered sugar
  • 1/3 cup all-purpose flour, heat-treated and cooled
  • 1/3 cup Dutch-process cocoa powder
  • 2 tablespoons light or dark brown sugar
  • 3 tablespoons milk, plus more if needed
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons mini chocolate chips, for topping
  • Strawberries, pretzels, graham crackers, or cookies, for serving

Instructions

  1. Heat-treat the flour by spreading it on a baking sheet and baking at 350°F for about 5 minutes, or until it reaches 160°F. Let it cool completely.
  2. Add the softened cream cheese and butter to a medium bowl.
  3. Beat with an electric mixer on medium speed for about 1 minute, or until light and fluffy.
  4. Add the powdered sugar, cooled flour, cocoa powder, brown sugar, milk, vanilla, and salt.
  5. Mix on low speed until the dry ingredients begin to combine. Increase to medium speed and beat until smooth and creamy.
  6. Scrape the sides and bottom of the bowl, then mix for another 20 to 30 seconds.
  7. Add another teaspoon of milk if the dip feels too thick.
  8. Transfer the dip to a serving bowl and top with mini chocolate chips.
  9. Serve immediately with strawberries, pretzels, graham crackers, vanilla wafers, or cookies.

Notes

  1. Heat all-purpose flour to 160°F before adding it to the dip, then let it cool completely.
  2. Dutch-process cocoa gives the dip a darker color and deeper chocolate taste, but regular unsweetened cocoa also works.
  3. Use light or dark brown sugar according to your flavor preference.
  4. Whole, reduced-fat, skim, almond, oat, or soy milk can work in this recipe.
  5. Store leftovers in an airtight container in the refrigerator for up to 4 days.
  6. Let chilled dip soften at room temperature for about 15 minutes, then stir before serving.
