Description

Bulgur with Ground Beef and Vegetables is a hearty one-skillet Mediterranean-inspired meal made with tender bulgur, savory beef, and simple vegetables in just 30 minutes.


Ingredients

  • 10 1/2 ounces ground beef (about 0.65 lb)
  • 1 cup dry bulgur
  • 1 medium yellow onion, finely chopped
  • 1 medium carrot, grated or finely diced
  • 1 tablespoon tomato paste
  • 2 cups water or beef broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (optional)

Instructions

  1. Rinse the bulgur under cold water and drain well.
  2. Heat a large skillet over medium heat and add olive oil if using. Cook the chopped onion for 3 to 4 minutes until softened.
  3. Add the grated carrot and cook for another 3 to 4 minutes, stirring occasionally.
  4. Add the ground beef and cook for 6 to 8 minutes, breaking it apart, until browned and fully cooked. Drain excess fat if needed.
  5. Stir in the tomato paste, salt, and black pepper and cook for 1 to 2 minutes.
  6. Add the rinsed bulgur and water or beef broth. Stir to combine.
  7. Bring to a gentle boil, reduce heat to low, cover, and simmer for 12 to 15 minutes until liquid is absorbed and bulgur is tender.
  8. Remove from heat, let sit covered for 5 minutes, then fluff with a fork before serving.

Notes

  1. Beef broth adds deeper flavor compared to water.
  2. You can add diced bell peppers or zucchini for extra vegetables.
  3. Store leftovers in an airtight container in the refrigerator for up to 3 days.
  4. Reheat with a splash of water to prevent drying out.
