Description

Cajun Potato Soup is a creamy, hearty soup made with tender potatoes, smoky andouille sausage, Cajun spices, cream, and cheese for a comforting one-pot meal.


Ingredients

  • 1 tablespoon vegetable oil
  • 1 ring andouille sausage, sliced
  • 1 large onion, diced
  • 1/2 cup diced celery
  • 1/2 red bell pepper, diced
  • 2 teaspoons minced garlic
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 4 cups chicken broth
  • 4 large russet potatoes, peeled and cubed
  • 1/2 cup heavy whipping cream
  • 1 cup shredded mild cheddar cheese
  • Chopped parsley for garnish

Instructions

  1. Heat oil in a large pot over medium heat and brown the sausage, then remove and set aside.
  2. Add onion, celery, and bell pepper to the pot and cook until softened.
  3. Stir in garlic and cook briefly.
  4. Add Cajun seasoning, salt, pepper, paprika, cayenne, broth, and potatoes.
  5. Simmer until potatoes are tender.
  6. Return sausage to the pot and stir in cream and cheese.
  7. Cook until heated through and smooth.
  8. Garnish with parsley and serve warm.

Notes

  1. Adjust cayenne for less heat.
  2. Stir gently when adding cheese for a smooth texture.
