12 oz (340 g) spiral pasta (cavatappi or rotini)
-
14 oz (400 g) smoked sausage (Andouille or kielbasa), sliced
-
2 tbsp olive oil
-
3 garlic cloves, minced
-
1 cup heavy cream
-
1 cup grated Parmesan cheese
-
2 tsp Cajun seasoning (adjust to taste)
-
Salt and pepper, to taste
-
Fresh parsley, chopped (for garnish)
Instructions
-
Cook Pasta: Boil pasta in salted water until al dente. Drain and set aside.
-
Brown Sausage: Heat olive oil in a large skillet over medium heat. Add sliced sausage and sauté until browned and crispy.
-
Add Garlic: Stir in minced garlic and cook for 1 minute.
-
Make Sauce: Add heavy cream, Parmesan, Cajun seasoning, salt, and pepper. Stir well and let simmer for 3–5 minutes to thicken.
-
Combine: Add cooked pasta and toss to coat in the sauce.
-
Serve: Garnish with fresh parsley and serve warm.
Notes
Add pasta water to loosen sauce if needed.
For more heat, add red pepper flakes.
Freshly grated Parmesan melts better than pre-shredded.
Kielbasa gives a milder flavor, Andouille for more spice.
Great with sautéed bell peppers, spinach, or mushrooms mixed in.
