Description

Cajun White Chicken Chili is a comforting fusion of traditional white chicken chili and bold Cajun flavors. It combines tender chicken, smoky andouille sausage, white beans, and vegetables in a creamy, flavorful broth, delivering a dish with a satisfying kick and a rich, creamy texture.

  • 1 lb boneless, skinless chicken thighs or breasts

  • 1/2 lb andouille sausage, sliced

  • 1 onion, chopped

  • 2 celery stalks, chopped

  • 1 bell pepper, chopped

  • 3 cloves garlic, minced

  • 1 jalapeño, chopped (optional, for spice)

  • 2 cups chicken broth

  • 2 cans (15 oz each) white beans (Great Northern or cannellini)

  • 1 cup half-and-half or heavy cream

  • 2 tsp Cajun seasoning

  • 1 tsp chili powder

  • 1 tsp cumin

  • 1/2 tsp garlic powder

  • 1/2 tsp cayenne pepper (adjust for spice level)

  • Salt and black pepper, to taste

  • Juice of 1 lime

  • Fresh cilantro, for garnish

  • Shredded cheese, for garnish (optional)

  • Sour cream, for garnish (optional)

  • Green onions, for garnish (optional)


Instructions

  • Sauté Vegetables: Heat oil in a large pot over medium heat. Add onion, celery, and bell pepper. Cook until softened (5 minutes).

  • Cook Proteins: Add chicken and sausage. Brown for a few minutes.

  • Add Aromatics: Add garlic and jalapeño. Cook for another minute.

  • Simmer: Add chicken broth, beans, and seasonings. Bring to a boil, then simmer for 30 minutes.

  • Add Cream: Stir in half-and-half or heavy cream for a creamy texture.

  • Garnish & Serve: Top with lime juice, cilantro, cheese, sour cream, and green onions. Serve hot.

Notes

For a milder chili, reduce jalapeño and cayenne pepper.

Can be made ahead and stored in the fridge for up to 3 days.

For a vegetarian version, replace chicken and sausage with tofu or tempeh.
