Description
This Caprese Dip is a warm, cheesy appetizer made with roasted tomatoes, basil, and melted Italian cheeses. It is perfect for sharing with bread or crackers.
Ingredients

- 2 cups cherry tomatoes
- 1 tablespoon olive oil
- 2 tablespoons basil pesto
- 5 cloves garlic, minced
- Kosher salt and black pepper, to taste
- 1 cup sour cream
- 1/2 cup fresh basil, chopped
- 8 ounces low-moisture mozzarella cheese, cubed
- 8 ounces shredded provolone cheese
- 1/4 cup grated parmesan cheese
Instructions
- Preheat the oven to 400°F and place the rack in the middle.
- Add one cup of whole cherry tomatoes to a baking dish and toss with olive oil, pesto, garlic, salt, and pepper.
- Bake for 15 minutes until tomatoes soften.
- Mix sour cream, basil, mozzarella, provolone, and parmesan in a bowl.
- Stir the cheese mixture into the roasted tomatoes.
- Top with remaining sliced tomatoes.
- Bake for 20 minutes until bubbly and lightly golden.
- Top with fresh basil and serve warm.
