Description

This wonderful caramelized cream of onion soup is made with caramelized onions, chicken stock, cream, sherry, and thyme. All your family and friends will love this recipe!


Ingredients

  • 1/4 cup unsalted butter
  • 3 large yellow onions, peeled and sliced
  • 1/2 teaspoon ground white pepper
  • 1 1/2 teaspoons dried thyme
  • 1/4 cup all-purpose flour
  • 1 1/2 cups dry sherry
  • 1 quart low sodium chicken stock
  • 2 cups heavy cream
  • 1 tablespoon kosher salt
  • 1 tablespoon lemon juice
  • 1 teaspoon hot sauce
  • 2 twists freshly ground black pepper

Instructions

  1. In a heavy saucepan, melt the butter and add the sliced onions. Sauté over medium heat until caramelized, about 30 minutes, stirring often.
  2. Stir in white pepper and thyme. Add flour and mix thoroughly. Pour in sherry and cook until thickened.
  3. Stir in chicken stock and bring to a boil. Reduce heat and cook for 5 minutes.
  4. Add cream, lemon juice, salt, black pepper, and hot sauce. Cook until heated through.
  5. Adjust seasoning if needed and serve hot.

Notes

  1. Stir onions frequently to prevent burning during caramelization.
  2. Use a heavy-bottomed saucepan for even cooking.
  3. Reheat gently to maintain creamy texture.
