Description

Carrot Apple Salad is a light, refreshing salad made with shredded carrots, crisp apples, and a creamy yogurt dressing. Perfect as a healthy side dish or quick lunch option.

Ingredients

Scale
  • 6 medium carrots, peeled and shredded
  • 1 large apple, grated or julienned
  • 1/2 cup diced celery (optional)
  • 3/4 cup plain yogurt or Greek yogurt
  • 1 teaspoon honey or maple syrup
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chopped fresh parsley
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Peel and shred the carrots. Grate or julienne the apple and toss immediately with lemon juice.
  2. Dice the celery and chop the parsley.
  3. In a small bowl, whisk together yogurt, honey, parsley, salt, and pepper.
  4. Combine carrots, apple, and celery in a large bowl.
  5. Pour dressing over the mixture and toss until evenly coated.
  6. Cover and refrigerate for at least 1 hour before serving.

Notes

  1. Use firm apples like Honeycrisp or Granny Smith for best texture.
  2. Toss apples in lemon juice immediately to prevent browning.
  3. Add toasted nuts or seeds just before serving for extra crunch.
  4. Store in an airtight container in the refrigerator for up to 3 days.
