Description

Soft and spiced carrot cake whoopie pies filled with rich cream cheese frosting, perfect for spring desserts and gatherings.


Ingredients

Scale
  • 2 cups flour
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups grated carrots
  • 1/2 cup nuts
  • 1/2 cup coconut
  • 6 oz cream cheese
  • 1/2 cup butter
  • 1 1/4 cups powdered sugar
  • 1/2 teaspoon vanilla
  • 2 teaspoons lemon juice

Instructions

  1. Preheat oven to 350F and line baking sheets
  2. Mix dry ingredients together
  3. Beat butter and sugars until fluffy
  4. Add eggs and vanilla
  5. Mix in dry ingredients
  6. Fold in carrots nuts and coconut
  7. Chill batter for 1 hour
  8. Scoop batter onto baking sheets
  9. Bake 15 to 20 minutes
  10. Cool completely
  11. Beat filling ingredients until smooth
  12. Assemble sandwiches

Notes

  1. Chill batter for best texture
  2. Do not overbake
  3. Add more sugar if filling is too soft
