Description

Cheat’s Opera Cake (Almond Coffee Cake) is a delightful dessert that transforms your kitchen into a Parisian pastry shop with almond sponge, rich coffee flavor, whipped frosting, and a simple chocolate finish.

Ingredients

Scale
  • 1 cup almond flour
  • 1/2 cup granulated sugar
  • 3 large eggs
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brewed strong coffee (espresso preferred)
  • 1 cup heavy cream (for frosting)
  • 1/4 cup powdered sugar (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease two round baking pans and line them with parchment paper.
  2. Combine almond flour and granulated sugar.
  3. Beat eggs until frothy, then mix in melted butter and brewed coffee.
  4. Combine wet and dry ingredients until smooth.
  5. Divide batter evenly between pans and bake 25–30 minutes.
  6. Whip heavy cream with powdered sugar until stiff peaks form.
  7. Cool cakes fully and layer with whipped frosting.

Notes

  1. Use espresso for deeper coffee flavor.
  2. Chill cake before slicing for cleaner pieces.
