Description

Crispy Cheese Potato Croquettes with a golden crust, soft potato interior, and melted cheese in every bite.


Ingredients

  • lb russet potatoes, peeled and cut into chunks
  • 2 tablespoons all-purpose flour
  • 1 large egg yolk
  • 2 tablespoons fresh herbs, finely chopped
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 3½ oz cheese, finely grated
  • 2 large eggs, beaten
  • ¾ cup all-purpose flour
  • 1½ cups breadcrumbs

Instructions

  1. Boil potatoes in salted water until fork-tender, then drain and mash until smooth.
  2. Let mashed potatoes cool slightly.
  3. Mix in flour, egg yolk, herbs, salt, and pepper until combined.
  4. Stir in grated cheese evenly.
  5. Shape mixture into small cylinders or balls.
  6. Coat each croquette in flour, dip in beaten eggs, then roll in breadcrumbs.
  7. Heat oil to 350°F and fry croquettes in batches until golden and crisp.
  8. Drain on paper towels and serve hot.

Notes

  1. Chilling breaded croquettes before frying helps them stay crisp.
  2. Different cheeses can be used for varied flavor.
